Okay, if you’re juggling hockey practice, dance practice, track days, and random mid-week play dates like we are, you know the chaos of weeknight dinners.

I like to buy whatever steak is on sale, tuck it in the freezer, and forget about it until I need a dinner win.

I hit this same wall every spring, and it never fails.

When the weather gets hot, the last thing I want to do is crank up the oven or hover over a sizzling stovetop. The kitchen turns into a sauna, and honestly, no one has time for that, especially not in the middle of summer.

Last Tuesday, I was staring into my fridge at 5 PM with absolutely no dinner plan in sight.

As much as I look forward to summer, let’s be real, it gets busy fast. Between end-of-school chaos, sports, backyard play, road trips, and trying to soak up every bit of sunshine, cooking a full dinner is the last thing on my mind.

Every day after school feels like a full-blown sprint. My daughter has dance class one evening, softball the next, and sometimes both in the same week.
